Sunchokes, also known as Jerusalem artichokes, are a funny-looking tuber with a wonderful nutty and sweet flavor. Once cooked or roasted, their texture resembles that of a creamy potato (similar to a roasted fingerling potato).
Sunchokes can be roasted, fried, boiled, steamed, grilled, pickled, etc. You can enjoy them in all the similar ways you would use for any root veggies.
