The Maitake, mushroom with it’s distinct citrus edge, is regarded as possessing a long mid palate citronella finish. It is meaty, has a soft floral nose, but considered more intense then the cultivated, as a result of it growing wild. It is also widely regarded as having medicinal benefits.
The clustered, overlapping grayish-brown, lateral spoon or fan-shaped caps grow 3/4 to 2-3/4 inches wide, arising from short white stalks that branch from the base. The surface of the tiny pores under the caps is whitish. The spores are also white.
How to Store and Handle Mushrooms
- Mushrooms should be kept in the refrigerator in a paper bag.
- As a rule, clean the mushrooms as you need them, ideally without water. Paring knives, mushroom brushes, and tea towels can all be used to remove debris.
- Mushrooms will usually last about a week in the refrigerator, but are best consumed within the first three days.
- If the mushrooms you receive are a little damp, allow them to air dry in the refrigerator.
